The whole fruit was
crushed and fermented. At just the right level of sweet and tart, precious
cherry eau de vie spirits
were added to halt fermentation and the must was pressed. In Cerise
tart, sweet, chokecherry and wild black varieties marry with a hint of oak to
make a sweet, complex full-bodied fruit wine.
